		<description>We had either a roaster or broiler (3 1/2 pound whole chicken), slow roasted in the oven, buttered the skin first.
It was the best, tenderest chicken we ever had! No taste comparison with any other chicken!</description>

Thanks for the expanation on the differences.  Which is more sustainable - air or water chilling?  My immediate thought was air, but you need a bit of energy to move that air around.  Could you email me your thoughts?</description>
